The Best Paleo Chili

This recipe has been a looooooong time coming. I have teased this for months but I just finally had to put pen to paper and write it out.

My favorite thing to eat in the winter months is a good soup or stew. I love the benefits of bone broth but I don’t drink it by itself often so utilizing bone broth in recipes can be a great way to get the nutrients in! Plus who doesn’t love to cozy up on a cold winter day with a warm bowl of chili?

One thing I really missed when going to paleo was a good cup of chili. I had stopped eating beans and I couldn’t find a recipe that didn’t make me MISS the beans so badly, so of course I decided to come up with one myself.

This recipe is like a classic chili your mom used to make, hearty and delicious and full of good stuff. However, I always like to sneak veggies in when possible! There may be some onions, potatoes, and peppers in addition to all of the tomatoes but if you are looking for more vegetables you can always put your chili over some cauliflower rice!

If you have leftovers, my dad and I always love to make chili hash for breakfast. It is just chili over potatoes with some eggs and bacon mixed in- talk about a MEAL.

This recipe will make about 4 servings give or take depending on the appetite of the people you are feeding. So who’s ready to cozy up with a nice bowl of chili?

What you’ll need:

Potatoes

Green bell peppers

Beef

Diced tomatoes

Bone broth

Tomato paste

Onion

Garlic cloves

Salt

Pepper

Cumin

Chili powder

Ingredients:

4 medium/small potatoes

2 green bell peppers

1 pound ground beef

1 14.5 oz can diced tomatoes

16 oz bone broth

1 6 oz can tomato paste

1/2 of a medium onion

4 garlic cloves

2 tsp salt

1/2 tsp black pepper

2 tsp cumin

2 tbsp chili powder

Instructions:

  1. Chop up the potatoes, onions, and green bell peppers and saute them in the bottom of your pot until mostly cooked.

  2. In a separate pan, cook your ground beef.

  3. Add your broth, diced tomatoes, and tomato paste into your pot with your veggies.

  4. Add the spices (including the garlic) to the pot as well.

  5. Once the beef is fully cooked add it to the chili mixture.

  6. Simmer on low for 20-30 minutes, stirring occasionally.
