Simple Paleo Cassava Tortillas
So it’s taco night and you’re out of siete tortillas but you don’t want to run to the store- have no fear I have the tortilla recipe for you!
Don’t tell siete because I love everything they do but these are actually my favorite tortillas I’ve ever had. The cassava flavor is delicious, and as long as you make the tortillas thin enough they don’t split apart. Plus if you are concerned with the xanthan gum in siete tortillas as you’re healing your gut- these are a phenomenal alternative.
Don’t get me wrong, I love siete tortillas too but sometimes it’s nice to make things by hand to see if you can. Or if you’re like me maybe you want to see if you can minimize the ingredients and make sure your recipe is made from all organic ingredients.
This is arguably one of the simplest recipes I’ve ever made. There are only 4 ingredients required and one of them is salt.
If you have a tortilla press then you’re in luck this will be the easiest recipe you’ve ever made. If not just make sure that you have parchment paper and either a rolling pin, a cup, or a plate. I’ve used the rolling pin technique many times and it is easy but you may not get perfectly round tortillas.
What you do is take two slices of parchment paper and place a ball of your dough mixture between them. Then you either use a rolling pin, cup, or a plate to push down the dough into a circle until it is about a 1/8 inch thick or thinner if you can get it that thin without breaking the dough. You’ll then remove the parchment and place the circular tortilla dough onto a pan. Easy, breezy, beautiful- tortillas.
I used olive oil in this recipe and love the flavor it gave, but if you are allergic to olives you can always use avocado oil.

What you’ll need:
Cassava flour
Water
Olive oil
Salt
Ingredients:
1 1/2 cup cassava flour
1 cup water
1/3 cup olive oil
1/2 teaspoon salt
Instructions:
Mix the salt and cassava flour in a bowl.
Add olive oil and knead until thoroughly mixed- you will likely have to use your hands.
Add water 1/4 cup at a time and knead with your hands into a dough.
Separate dough mixture into even sized balls.
Either use a tortilla press or use instructions in the article above to flatten the balls into tortillas.
Heat a pan to medium and cook your tortillas separately, flip when you see the outside start to cook.
Repeat until you’ve made all the tortillas.
