Paleo Chicken Caesar Wrap
The other day I got a craving for a chicken caesar wrap, the only time I’ve had a paleo version was at Just Be Kitchen in Denver but that’s a nice long flight away from me so I had to make my own. I am not sure what took me so long to decide to make this recipe, it was incredibly simple, delicious, and only took about 20 minutes from start to finish.
I don’t personally make my own caesar dressing but 40 Aprons has a good recipe for one if you like anchovies here. I love to use Primal Kitchen Caesar dressing, the ingredients are pretty good with no seed oils and very few filler ingredients. Again you can always dabble in making your own but I make lots of sauces on my own and pre-made dressings are one thing that I will get store bought. Primal Kitchen makes my life so easy for recipe development!
This recipe only requires 4 ingredients, I wish I was joking but it is so incredibly simple. It would be an even simpler recipe if you have shredded chicken on hand or a rotisserie chicken that you can shred! That would take prep time down from 20 minutes to 5!
If you do not have rotisserie chicken, you will have to shred the chicken yourself. You can always got he old fashioned way and shred your chicken with 2 forks, but I like to use a hand mixer. Personally, I like it because it is much faster and less physical labor on your hands to use a hand mixer. You may have to pull apart some pieces with fat or a vein, but other than that it should be a pretty quick process.
I prefer siete tortillas for this recipe, heated up for a few seconds so that they are easy to wrap. You can either microwave the tortillas for 10 seconds or heat them up on a skillet for a few seconds so they won’t break easily. I like the almond flour ones that can be found at multiple stores- including Costco. However, they have lots of different tortillas, even a burrito size if you want to just make one large wrap for your lunch!
The nostalgia of this meal takes me back, I swear I will make chicken caesar wraps for lunch about 10 more times this summer before I can truly say I’ve had enough.

What you’ll need:
Chicken breasts
Caesar Dressing- I like Primal Kitchen
Romaine Lettuce
Tortillas- I like Siete almond flour tortillas
Ingredients:
2 large chicken breasts (or a rotisserie chicken)
3/4 cup caesar dressing
1 head romaine lettuce
As many tortillas as your heart desires
Instructions:
Saute the chicken breasts in a pan (with some sort of oil).
Shred the chicken breasts to desired consistency, either with two forks or with a hand mixer.
Chop up the head of romaine lettuce into small pieces about the size of a quarter or nickel.
Mix together the romaine lettuce, shredded chicken, and caesar dressing.
If you are using siete tortillas, warm them slightly so they don’t break, see instructions above.
Put a few tablespoons of the chicken caesar mixture into a tortilla.
