Paleo Mint Chip Cookies
Your friends will be green with envy when they see you with these green paleo mint chocolate chip cookies!
Think your classic mint chocolate chip ice cream- but in a cookie! These cookies are soft baked, full of melty chocolate chunks, and will leave you with a refreshing peppermint taste in your mouth. You can make this recipe super simple with a few basic ingredients or make it more complex by making your own green food dye.
I wanted to make these cookies the classic green mint chocolate chip color but they were a little less green than I would have hoped. Either way I promise they’ll still taste delicious and you’ll be going back for seconds!
You can either keep your cookies looking like traditional chocolate chip cookies, use store bought green food coloring, or use my homemade food coloring made from spinach.
Now I know food coloring made from spinach sounds extremely complex but I promise it’s a lot simpler than you think! All you’ll need is spinach and water to get your homemade green food dye! Plus the spinach food dye adds no flavor to your cookies so they will still have the same mint chocolate chip taste you are hoping for!
With the green food dye these cookies can be versatile for Christmas, St. Patrick’s Day, or any day of the week. Whatever your reason for baking let’s get cooking !
What you’ll need:
Almond flour
Tapioca flour
Eggs
Maple syrup
Doterra peppermint essential oil (I only use doterra essential oil because they are externally tested and can be ingested, not all essential oils can be ingested so I do not recommend using an essential oil that isn’t doterra)- can sub for peppermint extract
Baking soda
Vanilla
Chocolate Chips or chunks- I like enjoy life mega chunks, Hu kitchen hunks, or just chopping up your favorite paleo chocolate bar into chunks
Food coloring (optional)- You can add food coloring to these cookies to make them green so that they look like your favorite mint chocolate chip ice cream. You can use store bought food coloring or my homemade spinach based food dye.
Ingredients:
COOKIES:
1 ½ Cups almond flour
½ cup tapioca flour
2 eggs
¼ cup maple syrup
12 drops doterra essential oil (can sub peppermint extract)
½ teaspoon baking soda
2 teaspoons vanilla
As many chocolate chips as you desire
3 tablespoons food coloring (optional)
FOOD COLORING:
2 cups spinach
Water
Instructions:
To make the food coloring:
Steam 2 cups spinach until the leaves are fully soggy.
Pour out the water.
Add wilted spinach to a blender with 3-4 tablespoons water.
Blend until liquid.
To make the cookies:
Sift flours and baking soda together.
Add eggs, maple syrup, peppermint, and vanilla. Mix thoroughly.
Add in food coloring (if you choose)
Mix in as many chocolate chunks as you desire.
Scoop golf ball sized portions of dough and place them a few inches apart on the cookie sheets.
Bake the cookies for 20ish minutes at 350°.
