Paleo Cauliflower Oatmeal
Nothing like a little cold weather and snow to make you crave a cozy bowl for breakfast.
Personally, I used to love cuddling up with a delicious bowl of oatmeal to get any chilly winter day started. But without oatmeal, what can a girl eat to give her the same ‘warm from the inside out’ feeling?
There are paleo “oatmeal” options out there but personally they’re too sweet for me. I love things naturally sweetened with honey, maple syrup, or dates; but for me that is just too much to start the day. I definitely have a sweet tooth but I don’t like my breakfast to spike my blood sugar- so this recipe isn’t sweetened with anything but vanilla and cinnamon.
Since becoming paleo I’ve struggled with breakfast options. I find myself not knowing what else to eat besides eggs, and let me tell you I’ve gotten pretty tired of eggs. So when I came across the idea of cauliflower oats I fell in love. It’s another delicious recipe to add to my breakfast repertoire. Plus they are so versatile- you can add different spices and toppings to get exactly whatever flavor you are craving.
I must admit, this isn’t an original idea, it’s been done by a few of my friends and I loved their idea so much I just wanted to make a rendition of my own. While this recipe may not taste exactly like oatmeal, it still gives you cozy breakfast vibes. Yes I may never get anything to taste exactly like oatmeal but cauliflower oats hold just as much of a place in my heart and they’re still super delicious just in their own way.
The best part is topping these “oats” however you want to get the flavor you’re craving. I love loading ALL the toppings onto my cauliflower oats. Usually it is a mixture of almond butter, coconut yogurt, and whatever fruit I have in my fridge. That really gives it the sweet flavor with some necessary healthy fats to satiate me. Who doesn’t love giving a meal their own unique twist? Here’s to meals that are as unique as the individual making them!
So let’s get down to ingredients!
What you’ll need:
Cauliflower rice
Almond milk
Collagen or protein powder (I like vital proteins vanilla coconut collagen)
Ground flaxseed
Ground chia seed
Vanilla
Cinnamon
Coconut flour
Ingredients:
2 cups cauliflower rice
1.5 cups almond milk
1 scoop collagen (or protein powder)
¼ cup ground flaxseed
¼ cup ground chia seed
2 tablespoons vanilla
1 1/2 tablespoon cinnamon
2-3 tablespoons coconut flour
Instructions:
Turn the stove on medium
Combine all ingredients in a pot on the stove.
Stir until well combined and flax/chia thickens the mixture and mixture is warm.
