The perfect paleo chocolate chip cookies
This recipe started out as me just messing around in the kitchen, but turned into the best paleo chocolate chip cookies I’ve ever made. And that is saying a lot because for a while there I was experimenting with chocolate chip cookies every week.
This recipe makes a lot of cookies- like two sheets worth, so be prepared to either eat a lot of cookies or give them away to some friends and family!
No one is going to have any idea that this recipe is paleo. It’s sweet and tastes just like your classic tollhouse chocolate chip cookie. You could feed this cookie to anyone and their mouth will be watering for more.
The key to these cookies is the almond butter in the batter, it adds to the gooey texture. It also makes the flavor impeccable and just like those homemade cookies your mom used to make for you. I have not tried with any other nut butters but I am sure a cashew butter would be just as delicious!

In terms of chocolate I like to use Hu kitchen chocolate gems, they have simple ingredients and make the best dark baking chocolate I’ve found on the market. However, you can use whatever chocolate chunks or chips you want. Or if I can’t find the gems in store, I’ll buy a Hu kitchen chocolate bar and chop it into little pieces.
Be careful with these cookies- the top won’t get a true golden brown color until they’re almost over baked. I would look to the outside edges, when they start to brown you know your cookies are almost done!
So let’s get baking!
What you’ll need:
Almond flour
Tapioca flour
Almond butter
Eggs
Maple Syrup
Vanilla
Salt
Baking soda
Chocolate chips/chunks
Ingredients:
1 1/2 cups almond flour
1/2 cup tapioca flour
1/4 cup almond butter
2 eggs
1/2 cup maple syrup
1 1/2 teaspoon vanilla
1/4 teaspoon salt
1/2 teaspoon baking soda
As many chocolate chips as you desire
Instructions:
Preheat oven to 350 degrees F.
Mix all dry ingredients together in a bowl.
Mix wet ingredients into dry ingredients.
Add chocolate chips to your heart’s desire.
Scoop small balls of dough and place them about 1 inch apart.
Bake for 12-17 minutes
