Paleo Linzer Cookies
Picture this- you go to your family’s house for the holidays and you see these cookies on a platter. You instantly assume you can’t eat them- BUT WAIT, they’re paleo?? You bet they are, bakery quality linzer cookies made with simple delicious ingredients!
These are by far my favorite paleo cookies that I have ever made. They’re the perfect amount of soft and chewy and not too sweet. You’ll feel like you can eat the whole tray in one sitting because they’re just that addictive!
You can either make homemade jam using the simple 3 ingredient recipe I provide below, or use store bought- whatever your preference! I truly did not realize how easy jam was to make before I tried, all it takes is patience.
The only specialty item you will need is a linzer cookie cutter, personally I got mine on amazon for like $10 and it was worth every penny. But if you don’t want to buy a linzer cookie cutter you can just use this recipe to make cookie sandwiches.
The key to making these cookies perfect is waiting for the dough to chill in the fridge. If you skip that step you won’t be able to roll the dough out or cut the cookies without it sticking to literally everything in your kitchen.
When rolling your cookie dough out you can use coconut flour if you want to roll it out on the counter, I did not provide that amount in the measurement below so just use extra coconut flour to your liking. The other option is that you can roll your cookie dough out between two sheets of parchment paper- that is my personal preference.
I was seriously able to trick all my family and friends with these cookies, the response I got was “I feel like you’re going to tell me these are healthy but they’re just too good.”

What you’ll need:
Almond flour
Tapioca flour
Coconut flour
Maple syrup
Eggs
Ghee
Vanilla
Coconut butter
Raspberries
Honey
Lemon juice
Ingredients:
Cookie:
1/2 cup almond flour
1/2 cup tapioca flour
1/2 cup coconut flour
1/4 cup maple syrup
2 eggs
1/4 cup melted ghee (I like Fourth and heart vanilla bean ghee)
1 1/2 tablespoon vanilla
2 tablespoons melted coconut butter
Jam:
1 cup frozen raspberries
1/4 cup honey
1 teaspoon lemon juice
OR store bought jam
Instructions:
Mix all dry ingredients for cookie together. In a separate bowl mix wet ingredients together.
Thoroughly mix wet and dry ingredients together.
Once cookie dough is formed, refrigerate dough for 1 hour.
While your dough is chilling make the jam.
Put frozen raspberries in a sauce pan at medium heat.
Cook frozen berries until juice begins to come out from berries, then add honey and lemon juice.
Let jam mixture sit on low as you slowly mix, the longer it sits the thicker the jam gets so be patient.
After an hour take the dough out of the fridge. Roll dough out either on extra coconut flour or between two sheets of parchment paper to about 1/4 inch thick.
Cut using your linzer cookie cutter, or a regular cookie cutter to make cookie sandwiches.
Bake Cookies at 350 degrees until golden brown.
Let cookies cool then fill with jam.
